Yields: 4 Servings


6 mashed potatoes
1 head cabbage green white or red
1 head kale
1 medium onion
2 medium carrot

1. Peel and boil the potatoes until soft enough to mash with milk, buter and the usual seasonings.

2. Slice the cabbage and kale fine and allow it to come to a boil. Use sufficient water to soften it. Don't turn it into sludge.

3. Chop and saute the onions until transparent. Slice the carrots into small portions and cook until soft.

4. Combine the mashed potatoes,, cabbage/kale, and other vegetables well and turn into oven/microwave dish. Bake for at least 30 minutes in the oven agt 350 degress or 15 minutes in the microwave.

5. Serve with lots of butter and/or sour cream.

NOTES : Makes an excellent, hearty midwinter dish and can be reheated and served until the supply is gone.
